Wondered who it is Stockpiling?

Post by cblantfanclub » Tue Apr 07, 2020 10:01 pm

Don't panic’, cry the anti-hoarder fascists, furious at those of us stocking up. I refuse to be shamed.

Although, I admit, my £527 Tesco home-delivery yesterday included 27 loo rolls, dried pasta and 24 cans of baked beans — I’d have ordered more but they ran out.

And sufficient cat food to feed my moggy Ted through a fortnight’s confinement.

I’ve also now got enough booze to see me and my many friends through a pandemic.

I’m guessing, should it come to that, I’ll be the one that is having the last laugh, hic.

What I want to know is.... who's got all the yeast? Ca't find any anywhere & I'm running low.

I haven't picked up the waft of freshly baking bread as Ive gone down the street for my daily walk, so- where the hell is it all? Is it you Blanty?

Everybody is baking bread so there is none. It's not normally a big selling product and it must have gone through the roof.

Make yourself a starter culture. It'll be grand.

Never had much luck with sourdough, tried a few times with different recipes. Tastes good but never rises much for me. Allinson's yeast is much less hassle.

Odd, isn’t it.

Get some bicarbonate of soda, make some soda bread instead.

Yeah, I make soda bread sometimes, got a great recipe for walnut & Stilton soda bread. Can hardly wait for it to cool when its out of the oven. The recipe I have uses buttermilk - not sure how available that is at the mo (though I think you can use some sort of yogurt concoction in stead).

I've got six sachets of yeast and about 3kg of flour... Haven't seen a tin of yeast for months now.

I need my yeast and flour to make bagels for the 2kg of smoked salmon in my freezer

Recipe I have takes c 10 mins to mix up (while the oven is warming), c 20 mins to bake, you can be cutting the first still-cooling slice an hour after k.o.

200g strong white + 50 g strong w/w (I usually do 180/70 ish); 5g salt, 7g bicarbonate, 50g well crumbled cheese, 35 g well chopped nuts 255g buttermilk (not quite the whole carton- never found a use for the bit left).

mix it all up really well in a bowl till there's no loose flour, roll it into a nice ball on a floured surface, flatten it a bit, sprinkle bit of flour on top, chop a cross almost through to divide into quarters, put in oven on oiled tray.
230ish for 5 mins then down a bit to 220 for 15/16/17 mins.

I need some Stilton and buttermilk before I can do this again.

Similar to the wifes recipe LB... she occasionally adds chopped Dates and chopped Walnuts... but she likes your cheese addition will try that.

👍😎👍

You can make your own buttermilk. Just normal milk + a spoonful of lemon juice or white vinegar and stir.

OK -thanks, Ive got lemon juice left over from pancake making, presumably full milk is best. I've never tried making it with owt but a tub of Sainsburys buttermilk but the recipe I have does give alternatives:
"Alternatives to buttermilk: sour milk (you can sour milk with lemon juice but if you do add a tsp of cream of tartar otherwise the bread will not rise so much); OR a 50/50 split of plain yoghurt and full fat milk.

I've not tried the alternatives as Ive always before been able to pick up buttermilk for c 85p at the small convenience Sainsbury in town that I pass regularly. If I cant get any currently, Ill try one of the alternatives though.
