I always thought it was down to who had the ball. If the opposition intercepts, it switches to them. If somebody crosses the ball it's still their possession, but it switches if a defender heads it out.

They count how many 'possessions' a team has. So if the team has a lot of passes and a lot of successful touches they have a lot of possession.

If however a team has more time on the ball and doesn't make a lot of passes or touches then they are considered to have less possession.

In other words it's not a timing of how long a team carries the ball, or how many set pieces or headers they win, but how many 'possessions' they have in total compared to the opposition.
