It's pancake day, innit?
Forgot last year so done a quick Google and yep, it's pancake day today.
I use my Yorkshire puddings mix 60g flour, 2 eggs, 150ml milk. Never fails and seems to do alright pancakes.

Ideally make your batter and let it rest for about 30 minutes before cooking. This allows the flour to absorb the liquid, making the pancakes lighter and fluffier.

I got given a tip for yorkshires that I've used for years, don't weigh anything.
Use a cup, mug or recepticle of required quantity.
Fill it with flour add salt, fill it with eggs and mix till you have a smooth thick batter, fill it with milk or milk/splash of water and mix the lot.
Never fails.

This is my effort.
Half bread flour, half chestnut flour (made by a friend, brought back from France). 1 egg, some milk, cow’s and oat Just what I had in the house!
(Don’t seem to be able to upload photo…)

I don't normally bother but picked up a pre made mixture bottle from tesco. Just add water and shake.
What a mess. Took 10 minutes to clean the pan after the first abortion.
The 2nd attempt, I just slung the pan in the bin with all the mess.
