Ideally make your batter and let it rest for about 30 minutes before cooking. This allows the flour to absorb the liquid, making the pancakes lighter and fluffier.

I got given a tip for yorkshires that I've used for years, don't weigh anything.

Use a cup, mug or recepticle of required quantity.
Fill it with flour add salt, fill it with eggs and mix till you have a smooth thick batter, fill it with milk or milk/splash of water and mix the lot.
Never fails.

This is my effort.
Half bread flour, half chestnut flour (made by a friend, brought back from France). 1 egg, some milk, cow’s and oat Just what I had in the house!

I don't normally bother but picked up a pre made mixture bottle from tesco. Just add water and shake.

What a mess. Took 10 minutes to clean the pan after the first abortion.
The 2nd attempt, I just slung the pan in the bin with all the mess.
