Not bad aggi, though you're missing some beefy stock and some vinegary goodness (red wine / Worse-chester-shire sauce)

I like the way chili varies from person to person or area to area. Part of it's charm. In Cincinnati and Northern Kentucky they make it sweeter by adding a little jam. They also put spaghetti in it.
In Texas they use big chunks of brisket or steak, almost like a stew, and no beans!

Pickled jalapenoes are good, gives it a slightly tangy taste but sprinkle some fresh chopped chilli over the top when served to get that fresh chilli taste.
a touch of dark chocolate if you want richness
red, green and yellow peppers for colour.
celery - yes
whole cherry tomatoes.
no wine/port/worcester sauce, save that for the spagbol.
