They play 3 if its 1-1 to get a winner but if someone goes 2-0 up then there is no need to bother with the third set

Probably for the same reason that boxing rounds for women last only 2 minutes compared to 3 minutes for men.

I think you know that question will not be answered rationally
Neither will the question of; why are women awarded the same prize money per round as the men?
