Tasty.
When my parents had a shop, Lancashire tasty was known as cooking cheese. I was informed by a Senior exec at Dewlay that most Lancashire crumbly sold in supermarkets is made in Cheshire

Still has to be Dewlay Tasty Cheese by a country mile
All other Tasty cheeses have a completely different taste and not particularly nice
Dewlay (Garstang) is the best cheese maker in Britain and do amazing Cheddar and Red Leicester cheese
