UpTheClarets chefs: Cannellini beans?

my place of emploi this week is running a fantastic special on tins of beans (January is New Year's Res / Get Healthy month, don't you know).
Usually this is just your cheap regular kidney beans, black beans, etc, but this time they've included Cannellini beans which are normally twice the price.
Now I know you can plop them in a soup or cold in a salad. But that's a bit mainstream.

In a restaurant once I had Italian sausage loaded with fennel over cannellini beans and onions and possibly something mashed. Can't quite remember, but it was brill and since then I've always wanted to do stuff with them.

Any of you cheffies got any things you do with Cannellini beans?

Chuck them in a pan with enough water to cover, a veg stock cube/pot, a bit of garlic and a load of fresh rosemary. Simmer for around half an hour, drain any excess liquid, remove the large rosemary stalks and mash them up with a bit of decent olive oil. Goes really well with a nice piece of fish and some tomatoes roasted with lemon.

I was in Zante last year and was given a recipe for Fasolada .I have made it and is a great winter dish.
Check out the link...By the way the chef on the link makes cooking look so simple.check out all his other recipes.

Saute a chopped onion in olive oil, along with some chopped up black pudding then dump in your beans, with chopped parsley and garlic, season to taste (better with rock salt and freshly ground black pepper.
Et Voila!

That's a quick and easy tapas dish - you can sub the black pud with Chorizo if you prefer but then you won't need the olive oil.
