Import taxes, VAT (Austria)
I’ve seen some products online that are based and shipped from Austria. Has anyone any idea if Import Taxes, VAT and the like will be charged? Can’t seem to find anything concrete anywhere.

Yep, you will likely have both VAT and Import Duty to pay if it's over £39 I think it is.
Most prices from the EU are now VAT exclusive, though it might not explicitly say so.
But I'm not a tax man and have been wrong before. (hence 'likely' and 'I think')

I had two packages coming from Oz on November last year. Both with a value of just under £75, was fully aware this could lead to VAT & Duty.
One sailed through with no charges the other got held up until I paid.
So you can get lucky, and I have done in the past with other packages but you should always assume you will be paying.

If I sent you an item and stated that it is a gift, but with a nominal value of £25 for tax purposes, what evidence do customs need if they decide that it's worth more and duty has to be paid?

I was sent a pre-owned scanner, as a gift, from US last year. Yep, very possibly duty, VAT and an admin fee.
Fortunately Brexit has got rid of a lot of red tape so all you need to do is find your product in this list https://www.trade-tariff.service.gov.uk/sections (there's only about 10,000 of them so it's pretty easy), calculate the duty and VAT thereon and then take a guess at what admin fee you'll be charged (normally between about £5 and £15 depending on carrier).
Much more straightforward than just being charged the advertised price.

I import/export to the EU through my job and from what I can tell you’ll be charged VAT, import duty (usually around £10 or 2.5% of the VAT - whichever’s higher) and maybe a customs admin fee that’ll probably be in the region of £5.
