Pizza Toppings

About to stretch myself out some dough for the nights tea -
Question is what are your favourite pizza toppings? I've got a few different things in but I'm after ideas.
Generally I'm a pepperoni type fella but lately I've been getting the meat out of sausages and putting that down with some chilli.

In Italy less is more with pizza toppings so I like to keep it traditional with donner meat and pineapple.

Call me boring but you can't go wrong with a pepperoni or even a margherita. Less is more.

Simple Ham and Pineapple or Sweet Chilli Chicken.
4 cheeses also decent.

Minimal toppings, ALWAYS on a thin base, none of this deep pan or stuffed crust nonsense.
A basic margarita with fresh basil and mozzarella and some pepperoni will do me.

I sometimes collect from our local Italian restaurant when I want authentic/traditional, pepperoni or chicken kiev.
When I want fully loaded, it's Asda large thin and crispy. BBQ base with steak, red onion, bacon and mushrooms.

Mushrooms and/or good quality ham. I wouldn't trust anyone who wants to add pineapple. It's just wrong. Like someone adding jam to cheese on toast.

I make my own sauce but I've got a chilli leftover so yeah I will tonight

Nduja sausage, chorizo sausage, jalapenos and red onion, Basil not oregano
On my homemade poolish pizza dough base made at least four days before its needed, I fully recommend making poolish pizza dough it's fantastic, if anyone wants my recipe that I took about 1 years of playing around to perfect it I can post it if needed it's about a 65% hydration dough so not to difficult to work with

When Toni still had his place in Great Harwood, he would make his chefs special which had salami, pancetta and peaches. Incredible taste I’ve never been able to replicate.
I also enjoy a white pizza with onions, olive oil, garlic and cheese.

Philly Cheesesteak Pizza from PapaJohn's. Green pepper, onion, steak, mozzarella, provolone, with garlic sauce as a side dip. The only pizza I ever order, a little on the expensive side but ohhh sooo good.

I often whizz up a quick one on a wrap.
Ketchup and tom puree on the wrap, half a mozarella ball torn uo, but of grated cheese, nduja and some roquito peppers.
Fresh basil leaves added afterwards elevate it.
Just back from Italy and honestly the above isn't a bad substitute for the real thing.

I like most things, especially a bit of spicey, but pepperoni with mushrooms is excellent.
I must say though that although I like both sweetcorn or pineapple shouldn’t be within a mile of a pizza. And stuffed crusts don’t exist in Italy to the best of my knowledge.

Quick tip. If you ever have to order from Domino’s make sure you tick the Italian base option. So much nicer than their standard doughy base

Barbecue sauce, chicken, jalapeño slices and then….grilled /blackened / caramelized mandarins or grapefruit. Trust me.

Beetroot and goats cheese,had it in London after watching the clarets at Chelsea,boy did it work with a good drizzle of chili oil

Developed a taste for tuna and red onion whilst on holiday in sorrento. Absolutely delicious.
Other than that, basic thin crust margherita with pepperoni added.

I'm not a sweet person but the banoffee pizza we make on Pizza Party nights always steals the show.
Carnation caramel for the base of preferably home made dough. Add slice bananas sprinkle with brown sugar cook at 850 degrees and then add scoops of good quality vanilla ice cream.
Slice to share.

Big fan of Rudys. I would recommend to anyone (theres a quite few of them dotted about the country now)
Pretty cheap and the quality is exceptional, especially compared to Pizza Express etc
