I reckon that's an at home 3 course meal, not a restaurant one.
My 3 course at home would be
Starter, black pudding with scallops in a light mustard sauce
Main rare rib eye steak with peppercorn sauce, chestnut mushrooms, skin on chips ,grilled tomatoes.
Pudding (Desert for our Southern Clarets) Lemon meringue pie.
Restaurant
Starter, chicken liver pate on melba toast with side salad and cranberry sauce
Main, pan fried duck breast in a drambuie sauce, dauphinoise potatoes, savoy cabbage with some pomegranate seeds mixed in.
Pudding, vanilla panna cotta with a strawberry coulis and a couple of strawberrys and a shortbread biscuit.
Try putting that in the pre order screen at the Turf

.
What's yours ?

That article was not written by a mathematician! Shouldn't the percentages in each category add up to 100?

If I'm going to the trouble of making roast lamb with roast potatoes, Yorkshire pudding, carrots, cabbage, beans, and gravy, then they can whistle for a starter or a pudding. Fil up on the main course and have the pudding for tea.

I think we're mainly talking triple cooked chips, which need to be thick for the process to work.. They're amazing when done properly. Fence Gate were one of the first places I was aware of who did them...

I don't really have any favourites when eating out, but I rarely opt for steak. I can cook a decent steak, so I tend to go for things that I wouldn't ordinarily have at home, or something that takes a bit of care to get to 100% perfection. If we're eating at the White Swan in Fence and fish is on the menu - I'll go for that as long as it's not salmon.
Anyhow, if I have to pick three, it would be something like this.
Starter. Something, something with scallops.
Mains: Something, something with fish.
Afters: Please bring me the cheese board.

The old chippies used to do triple cooked chips back in the day.
You just had to go at the right time. Get the first of the lunchtime batch and they were last night's chips put back in the fryer: Triple cooked chips!

Some of the thick cut chips I've seen are bigger than roast potatoes, chips should be the size you get them in a good chip shop.... Anything else is trying to be posh, and failing miserably

They're "cooked twice" initially. All chippies "cook" twice, that's just how you make chips. Third time is the re-heat.

Not sure all chippies cook twice.... Not from what I've seen in the good ones... Fresh, uncooked potatos, into the fryer, and out as chips, just like at home

I really miss Berni Inns, they were fantastic I’d love them to come back. Perhaps a Private Equity firm might do this, I think sometimes restaurant food has become too cheffy!
Anyway back to the subject in hand , a three course meal:
1st Course - A small salad niciose,( using tinned Tuna)
2nd Course - Sole Veronique , with mashed potato and cream piped into mounds and then grilled with Grated Comte., served with spinach
3rd Course - Tiramisu with slices of Mango.
Voila!

Evidently, Bernice Inns was sold to Whitbread and became Beefeaters.
I used to go to Berni Inns with my girlfriend/wife, for a treat. 3 courses and bottle of Moselle or Liebfraumilch. Those were the days.
Dressed up too. Much more refined than the cas of today.

Nah, they have two fryers. Or more likely, one fryer with two separate pans. One should cook the chips at around 160 for 8 - 10 minutes. This cooks the potato.
Then they go into the second tub with hotter oil (around 180) for a couple of minutes to crisp up the outside.
Take a look next time.
Better still, if you've got your own fryer do it yourself. Just be sure to shake them well in between their baths and ensure the temp is hot enough before the plunges. It's especially important for the second plunge.

Beefeaters are probably just about the best of the Premier Inn linked places. The worst is probably the Brewers Fayre (like the Queen Vic).

Proper chippies cut the potatoes, which fall into a bucket... Then into one fryer, come out as perfect chips if cooked correctly..... Inferior chippies might do it differently
Never make chips at home tbh

Have stayed in quite a few Premier Inns around the country and you are quite correct Beefeaters tend to be superior than the Brewers Fayre ... but must admit to enjoying the meal deals in both of them... pity the prices are getting a bit silly for the rooms though.

They’re always cooked first at a lower temp. Then reheated to order at a higher temp which crisps them. They’re nasty and flimsy after the first fry.

We must have worked at different chippies
The one I did, the range had two fryers, one for chips, one for fish.... Chips were only ever cooked once from fresh. Didn't have the space or time to cook chips twice.... It was about 50 years ago though

So if I see a chippy where they pour raw chips into the fryer and then pull out cooked ones and sell them to me ...
Some chippies might do what you say, but by no means all.

Yes, spot on. I'd actually blanche them by soaking them in boiling water if I can be bothered.
I suspect well over 99% of chippies don't bother and just use dry white which makes for acceptable chips.

Not true. Some people eat healthily and die young. If you eat healthily, you are more likely to live long enough to enter a nursing home trying to remember your own name, but there's no guarantee.

I'd never thought of it that way before.
Of course you're 100% correct. You could be killed by a crazed gunman or struck by lightning
So we might as well eat junk food, be miserable and suffer chronic I'll health before dying early. I've seen the light and am off to buy cheap ready meals this instance.

Common misconception. It's possible to eat junk food and be happy and healthy and live long enough to be able to enjoy life any more, and also common to eat junk food and be happy and healthy and drop dead without the period of illness.

Ah yes, the people of Okinawa should take a leaf out of those living in the inner City of Glasgow on all things diet and nutrition. After all, it doesn’t matter
