OTT Chicken Tikka Masala
for the amateur cheffies on here (of which I remember there are a few)
when making / marinating it do you use yoghurt? do you scrape it off before you cook it? Or do you just use a dry spice rub.
asking for a friend.
Also, what heat in the oven (they say)

This is the recipe i use Charlie and yes it uses yoghurt in the marinade.

I use 6 minutes in the microwave. Peel back film lid and stir. Then another 6 minutes in the microwave then I leave it for one minute before serving.

There is a You Tube channel called Al's kitchen. He shows you how to make all the Indian restaurant style dishes, from a huge batch of the base gravy onwards. If you like that style of food it's worth a watch.

Have watched that Herts and tried his base gravy and it does give an authentic taste to your curry.....i think using ghee is essential in indian curries to create the authentic taste.

This curry is the dog's testes. Always a crowd pleaser and as close to an authentic restaurant curry as I've had homemade. As someone else has said, the ghee is the most important ingredient...

And for once of the best curries i have ever made/tasted, try the Rick Stein Lamb and Spinach one from Mumtaz in Bradford. I bought a leg of lamb when they are on offer at a supermarket, de boned it and used that. Takes a while as you slow cook the lamb but it is a country mile ahead of your usual takeaway fayre.

Rileybobs...with over 30 ingredients required , and the ability to simply phone an Indian Restaurant always to hand, I take my hat off to you or anyone else who can be bothered to make that. Any cookery involving more than about 8 ingredients is beyond the pale for me.

Most of the ingredients are spices that I'd guess most people have in stock. I probably only have buy 7/8 ingredients. Then again I enjoy cooking and would rather eat this dish than a takeaway curry.

Slightly off topic but does anyone know if Asha in Brierfield has changed hands? The curries there seem to have gone downhill and seem different. Been ordering from them for about 10 years but ended up changing to Premier Curries.
