Arguing with Mrs T about dumplings last weekend. She makes her mix and pops the balls on top of whatever in the oven, they come out like cake. I asked her for proper suet dumps in boiling water and get told too much fat in the suet. Sometimes Suet is the only thing that will do!

INGREDIENTS
1 tbsp vegetable oil
2 cloves garlic
1 tbsp grated ginger

Then lower the heat and simmer for 25 minutes until the chicken is cooked all the way through, and can be easily pulled apart with two forks. Take the chicken out of the pot and shred with two forks, then return to the pot.
Process half of the corn in a food processor or blender, then add to the soup together with the whole corn kernels.
Add in the sesame oil and cook for 10 minutes longer. Mix 2 tbsp of the cornflour with 2 tbsp of the broth taken from the pot. Stir into the soup to thicken, then take off the heat.
Beat the eggs in a small bowl, then drizzle the eggs over the hot soup and stir with a fork to form long, thin strands of the cooked egg. Add more salt if needed. Serve topped with sliced green onion, fresh coriander and chilli oil.

my simple lentil soup:
a knob of butter
1 medium onion, roughly chopped
2 large carrots, sliced
1 mug filled to the brim with red lentils, washed
1 litre of stock (better made with a chicken carcass but stock cubes/pots will do)
half a teaspoon of curry powder
half a teaspoon of turmeric
a dessert spoon of tomato puree (optional, for colour)
a thumb sized piece of fresh ginger, grated
salt and pepper
just melt the butter and add the onion and carrots until soft.
then add the rest of the ingredients and simmer until the lentils are soft. about twenty minutes i find.
then whizz with a stick blender.
if you're feeling fancy you can add a heaped tablespoon of grated creamed coconut before blending.
never fails and costs next to nothing.

Made a Leek and Potato soup yesterday
1 leek cut very thinly.
350g baby potatoes cut into very small pieces.
Kettle full of water
Salt
Pepper
Parsley
Philadelphia cream cheese herb. 3/4 tablespoons worth.
Another great soup. Enjoying not blending for taste and being more filling.
