Does nobody have suet dumplings with soup/broth anymore?
Can't beat it....used a knob of if strawberry jam with it... lovely.
Arguing with Mrs T about dumplings last weekend. She makes her mix and pops the balls on top of whatever in the oven, they come out like cake. I asked her for proper suet dumps in boiling water and get told too much fat in the suet. So what being my response.
I’d like to keep her so I’ll bite me tongue in future.

Does anyone have a recipe for proper Chinese restaurant standard chicken and sweet corn soup that they would like to share?

INGREDIENTS

1 tbsp vegetable oil
2 cloves garlic
1 tbsp grated ginger
3 spring onions
1.5 litre/ chicken stock
2 chicken breasts skinless and boneless
350g Sweetcorn frozen or tinned
2 tbsp soy sauce
1 tsp sesame oil
2 tbsp cornflour
2 eggs
1 tbsp chilli oil
Fresh coriander

Heat the vegetable oil in a pot and sauté sliced white part of the spring onions, minced garlic and grated ginger for 1 minute over low heat.

Pour in the chicken stock, soy sauce and add the chicken breasts, turn the heat up and bring to a boil.

Then lower the heat and simmer for 25 minutes until the chicken is cooked all the way through, and can be easily pulled apart with two forks. Take the chicken out of the pot and shred with two forks, then return to the pot.

Process half of the corn in a food processor or blender, then add to the soup together with the whole corn kernels.

Add in the sesame oil and cook for 10 minutes longer. Mix 2 tbsp of the cornflour with 2 tbsp of the broth taken from the pot. Stir into the soup to thicken, then take off the heat.

Beat the eggs in a small bowl, then drizzle the eggs over the hot soup and stir with a fork to form long, thin strands of the cooked egg. Add more salt if needed. Serve topped with sliced green onion, fresh coriander and chilli oil.

Just made my first homemade soup of the winter. All from leftovers as soup is intended.
5/5 rating

Thai flavoured Carrot + leek

One large leek cut thin
5 medium carrots cut into small pieces
2 Batchelor Thai cup a soup sachets
One kettle of boiling water
Salt
Pepper
Nutmeg

15 minutes or so cooking.
How is any of those ingredients leftovers ..leftover packets batchelor satchets plus a leek ? What’s that been left over from

I got a box of cup a soups and thought the Thai flavour was too strong, so had been left for a few months and would have been chucked out.
I bought the leek but never used it for anything and would have got binned.

my simple lentil soup:

a knob of butter
1 medium onion, roughly chopped
2 large carrots, sliced
1 mug filled to the brim with red lentils, washed
1 litre of stock (better made with a chicken carcass but stock cubes/pots will do)
half a teaspoon of curry powder
half a teaspoon of turmeric
a dessert spoon of tomato puree (optional, for colour)
a thumb sized piece of fresh ginger, grated
salt and pepper

just melt the butter and add the onion and carrots until soft.

then add the rest of the ingredients and simmer until the lentils are soft. about twenty minutes i find.

then whizz with a stick blender.

if you're feeling fancy you can add a heaped tablespoon of grated creamed coconut before blending.

never fails and costs next to nothing.

Made a Leek and Potato soup yesterday

1 leek cut very thinly.
350g baby potatoes cut into very small pieces.
Kettle full of water
Salt
Pepper
Parsley
Philadelphia cream cheese herb. 3/4 tablespoons worth.

Another great soup. Enjoying not blending for taste and being more filling.

And a rather large and quite unhealthy bowl of soup.

Cullen Skink soup.
Poach smoked/dyed Haddock/Cod fillets in milk. Chop up an Onion. Dice 3lb of potatoes, then boil them and the onion separately. Separate half a pound of the drained potatoes. Pour the milk from the fish onto the potatoes and mash. Then add more milk and the onion juice, until you can stir the mix. Flake the fish pieces, the rest of the diced potatoes and onion into the mix, stirring gently. Grate approx 1lb of Cheddar cheese into the soup and stir until the cheese has melted.
