Let’s just let it go - it was a harmless remark. But you’re quite right that there are vast variations in cuisine in that part of the world, and that isn’t defined by borders. Over there it will be determined by tribal seasonal produce, over here you will get tiffin box & railway style Indian curries from the Indian perspective offered in cities, usually broadly speaking will be all mashed into together but probably described differently for individual enticement.
