It definitely would have been given for the knee in the back.
But yes, if Ayling had punched the ball then VAR would probably have intervened to award a penalty that the referee would almost certainly have failed to award.

My best guess would be that the ref didn't see that Pope won the ball, and VAR did see that Pope won the ball but agreed with the commentators that he didn't win it by "enough" to overturn the referee. Or perhaps he didn't look at that replay - it was a very quick review.
Where in the rules does it say how much you have to win it by lol there really are no excuses it was a shockingly poor decision by the var ref not to overturn it you can even see this at normal speed no need for slow mo
