Any ideas when these are likely to go on sale?

Not until it's been determined when it will be played.

Recent sales suggest that's not a factor in the decision.

The Stoke game wasn't expected to be moved, hence the sale of tickets.
It's quite likely that the Arsenal game will be moved, and definitely will be moved, if they reach the Europa League semi-final. Irregardless of the Europa League Sky might decide to pick the game for live screening.
So on 2 counts there is a good chance that the game will be moved from the Saturday.

I presume it would therefore make sense with both clubs to hold back with ticket sales for another couple of weeks or so.
